Tuna Salad Surprise

Difficulty: simple, Serving: 4
What we need: Usual Kitchen Utensils


  • 2 Tins Tuna (170g), drained
  • 1/4 cup Onion, diced super finely
  • 1 Medium tomato
  • 1/4 Green pepper
  • 1 Radish
  • 1 Thick slice of Cheddar (I prefer 2 months matured)
  • Few slices of pickled Jalapeno (preference)
  • 1/3 Cucumber
  • 1 Small red sweet apple
  • 1 Tbs Ultimate seed mix
  • Baby spinach to serve
  • Rocket to serve
  • Avocado to serve
  • Rye Crackers to serve
  • Salt and Pepper to Season

For The Dressing

  • 1/4 cup Full cream Greek Yogurt
  • 1 Tbs Extra Virgin Olive oil
  • 1 Tbs Balsamic Vinegar
  • 1 tsp Dijon Mustard
  • 1 tsp lemon juice (fresh squeezed)


  1. Dice all ingredients to preference.
  2. Make sure onion diced very fine.
  3. Add all chopped ingredients and drained tuna to a large bowl.
  4. Use a small non stick pan to toast seed mix on a medium heat until beautifully brown. Be sure to watch them and stir occasionally. Set aside
  5. In a small bowl mix all the ingredients needed for the dressing.
  6. Add the dressing to the large bowl, season with salt and pepper and mix thoroughly until all well combined.
  7. Plate the Rye crackers, baby spinach and tuna salad neatly on a platter or plate.
  8. Top with rocket and toasted seeds.
  9. Serve.
  10. Display olive oil and Balsamic for any guests wanting to drizzle some over this yummy light meal.
  11. Avocado is also ideal for a side addition.
