The Rye French Toast

French Toast is that one easy meal where recipes are never needed. Most of us grew up with someone in the family making their own version of this classic.

My childhood memories of french toast had two main ingredients; Marmite and grated cheese. This combination has always been unbeatable, (I do suggest you give it a go, you will definitely not be disappointed).

The story of this particular combination I am about to share with you began when I joined friends for breakfast at a well known spot. I was so blown away with this flavor explosion that I had to give it a go.

I decided to use Rye bread that I had made the day before as I wanted to try keep it a little healthier. So although this french toast combination is very popular, I found it way more interesting using Homemade rye bread.

Difficulty: simple, Serving: 2
What we need: Non stick pan

  • 4 slices rye bread (see my Rye Loaf recipe)
  • 4 slices no fat bacon
  • 2 extra large free range eggs
  • dash milk (preference, i recommend 45ml)
  • half a lemon
  • Salt and pepper to season
  • Golden Syrup for drizzling (Maple or Honey are great substitutes)
  • 1 Tbs Coconut oil
  • 1 Tbs butter

  1. Crack the eggs into a bowl, add milk and season with salt and pepper.
  2. Whisk together until light and well combined.
  3. Heat a non stick pan to med-high heat.
  4. Add a few drops of Coconut oil or Butter and fry the non fat bacon until cooked. Remove from the heat and let cool on Kitchen towel to drain oil.
  5. Return pan back to stove and heat to medium heat.
  6. Dip each slice into the egg mixture, turning to make sure both sides are covered.
  7. Add 1 Tbs butter to the pan, watching that it melts quickly but doesn’t burn.
  8. Now its time to add your bread to the pan.
  9. Leave it to fry on one side until lightly browned, then flip to brown the other side.
  10. Top each slice of french toast with bacon, drizzle with syrup and serve with a lemon wedge on the side.
  11. DELISH!
